Instructions

  1. Preheat oven to 400 F.

  2. Slice mushrooms into 1/4-inch pieces.

  3. Whisk oil, soy sauce, maple syrup, liquid smoke, and red pepper flakes in a bowl.

  4. Add sliced mushrooms to the mixture, toss to coat, and marinate for 5 minutes.

  5. Heat a cast-iron skillet over high heat, then transfer mushrooms, leaving excess marinade. Sauté for 2 to 3 minutes until lightly browned.

  6. Transfer the skillet to the oven and cook for 15 minutes, or until firm and browned, stirring once halfway through.

  7. Serve warm or store refrigerated for up to 1 week.
