Preheat oven to 400 F.

Slice mushrooms into 1/4-inch pieces.

Whisk oil, soy sauce, maple syrup, liquid smoke, and red pepper flakes in a bowl.

Add sliced mushrooms to the mixture, toss to coat, and marinate for 5 minutes.

Heat a cast-iron skillet over high heat, then transfer mushrooms, leaving excess marinade. Sauté for 2 to 3 minutes until lightly browned.

Transfer the skillet to the oven and cook for 15 minutes, or until firm and browned, stirring once halfway through.
