Sherry Cream Sauce

Instructions

  1. Melt butter in a small saucepan over medium-low heat.

  2. Add minced garlic, onion, and clam base; sauté for 1 minute.

  3. Stir in heavy whipping cream and sherry; bring to a simmer.

  4. Reduce heat and and simmer for 5-8 minutes until the sauce reduces by 1/4 to 1/3.

  5. Season with salt, pepper, and any desired additional seasonings.

  6. Optionally, stir in paprika, Cajun seasoning, or nutmeg for enhanced color and flavor.
