Shepherd's Pie (Meat or Pareve)

Instructions

  1. Preheat the oven to 400°F (204°C) and grease an 8x8 inch baking dish.

  2. Boil potatoes in a stockpot until tender, then drain and return to the pot. Mash with oil and salt.

  3. In a large skillet, heat 3 tablespoons of oil. Sauté onions, celery, and carrots for 5-7 minutes, then add garlic for 1 minute.

  4. Add ground beef or vegetarian substitute to the skillet and cook until browned. Stir in flour until well combined, then incorporate tomato paste, marinara or ketchup, salt, pepper, broth, peas, and corn; cook until thickened.

  5. Transfer the meat mixture to the prepared baking dish. Spread the mashed potatoes evenly over the top and sprinkle with paprika.

  6. Bake for 25-30 minutes until the potatoes begin to brown. Serve hot.
