Sheet Pan Pork Chops and Potatoes

Instructions

  1. Preheat oven to 400 F and grease a large baking sheet.

  2. Cut potatoes into wedges, slice an onion into strips, mince garlic, and combine in a bowl.

  3. Toss the potato mixture with 2 tablespoons olive oil, spread on the baking sheet, and roast for 10 minutes.

  4. Meanwhile, heat 1 tablespoon olive oil in a skillet over medium-high heat and season pork chops with salt and pepper.

  5. Sear seasoned pork chops in the hot skillet for 4 to 5 minutes per side until browned, then transfer to the baking sheet with the potatoes.

  6. Continue roasting for 20 to 30 minutes, or until chops reach 145 F and vegetables are tender.

  7. Deglaze the skillet with chicken broth, scraping up browned bits, and boil until reduced by half; drizzle over chops before serving.
