Sheet Pan Greek Chicken

Instructions

  1. Preheat oven to 400 F.

  2. Whisk marinade ingredients, then coat chicken thighs with half the marinade and marinate for 10 minutes.

  3. Toss lemon, bell peppers, tomatoes, and onion with the remaining marinade, then arrange on one side of a baking sheet with the marinated chicken on the other.

  4. Bake for 25 to 30 minutes until the chicken reaches 165 F, then broil on high for 4 minutes.

  5. Top with feta and serve over rice.
