Shakkarpara Recipe
Shakkarpara are traditional Indian diamond-shaped snacks, often prepared for festivals like Diwali or Christmas.

Instructions

Heat cooking oil in a deep pan for frying.

Melt ghee and milk in a small pan, then transfer the mixture to a mixing bowl.

Stir sugar into the hot ghee-milk mixture until fully dissolved, then set aside to cool.

Combine flour, semolina, and salt in a separate bowl.

Once the ghee mixture is cool, gradually add the flour mixture, kneading by hand into a smooth, medium-firm dough.

Wrap the dough in plastic and let it rest for 30 minutes.

Unwrap and knead the dough again until it is soft and pliable.

Divide the dough into 6 equal balls, rolling each until smooth.

On a lightly floured surface, roll each dough ball into a 1/3-inch thick circle.

Cut each circle into 1-inch wide strips, then into diamond shapes; set aside small edge pieces for re-rolling.

Place the cut shapes on a paper towel-lined plate; repeat for all dough.

Fry small batches of the diamond shapes in the hot oil until golden on both sides, stirring frequently.

Remove fried pieces with a slotted spoon and drain on paper towels.

Allow the fried shakkarpara to cool completely before storing in an airtight container.
