Instructions

  1. Heat cooking oil in a deep pan for frying.

  2. Melt ghee and milk in a small pan, then transfer the mixture to a mixing bowl.

  3. Stir sugar into the hot ghee-milk mixture until fully dissolved, then set aside to cool.

  4. Combine flour, semolina, and salt in a separate bowl.

  5. Once the ghee mixture is cool, gradually add the flour mixture, kneading by hand into a smooth, medium-firm dough.

  6. Wrap the dough in plastic and let it rest for 30 minutes.

  7. Unwrap and knead the dough again until it is soft and pliable.

  8. Divide the dough into 6 equal balls, rolling each until smooth.

  9. On a lightly floured surface, roll each dough ball into a 1/3-inch thick circle.

  10. Cut each circle into 1-inch wide strips, then into diamond shapes; set aside small edge pieces for re-rolling.

  11. Place the cut shapes on a paper towel-lined plate; repeat for all dough.

  12. Fry small batches of the diamond shapes in the hot oil until golden on both sides, stirring frequently.

  13. Remove fried pieces with a slotted spoon and drain on paper towels.

  14. Allow the fried shakkarpara to cool completely before storing in an airtight container.
