Instructions

  1. Preheat oven to 350°F.

  2. Thoroughly clean shagbark hickory bark pieces, scrubbing if needed, and discard any with lichen.

  3. Spread bark on a baking sheet and roast for 20-25 minutes until fragrant.

  4. Place roasted bark in a large pot, cover with water, bring to a boil, then reduce heat and simmer for 30 minutes.

  5. Strain the liquid, discarding bark. Measure the liquid and return it to the pot.

  6. Add an equal amount of sugar to the liquid, then bring to a boil. Reduce to a low boil/high simmer, whisking regularly to prevent scorching.

  7. Continue cooking until the liquid reduces by 25-30%.

  8. Remove from heat and let cool.

  9. Pour syrup into bottles or canning jars. For long-term storage, process sealed jars in a boiling water bath for 10 minutes.
