Sesame Seed Dessert Balls (Jian Dui)
These sesame seed balls are a popular, homemade dessert often enjoyed during Lunar New Year celebrations.

Instructions

Start boiling 1 cup of water; separately, heat 3 inches of oil in a wok to 250 F.

Spread sesame seeds on parchment paper and place a small water bowl nearby.

Dissolve brown sugar in 1 cup of boiling water.

Combine rice flour in a large bowl with the dissolved sugar mixture; stir to form a sticky, caramel dough, adding up to 1/3 cup more boiling water as needed.

Form golf-ball sized dough pieces, indent, fill with 1 teaspoon of red bean paste, and seal.

Dip each ball in water, then roll in sesame seeds.

Fry balls in batches in the hot oil.

After about 2 minutes when seeds are light brown, press balls against the wok with a spatula until golden brown and expanded.

Drain on paper towels; serve warm.
