Instructions

  1. Heat oil in a deep pot over medium-high heat.

  2. Add onion, garlic, and chili; stir-fry for 1 minute until fragrant.

  3. Stir in red pepper and tomato, cooking for another minute.

  4. Add rice and stir to coat.

  5. Pour in stock and bring to a high boil.

  6. Mix in lime juice, fish sauce, turmeric, and saffron (if desired).

  7. Once bubbling, cover the pot tightly, reduce heat to low, and cook for 15 to 20 minutes until liquid is mostly absorbed.

  8. Remove lid, fold in peas, and stir gently.

  9. Replace lid and let sit on the turned-off hot burner for at least 10 minutes.

  10. Uncover, fluff rice with a fork, and season with salt if needed.

  11. Garnish with fresh basil before serving.
