Preheat the oven to 475 F.

Pierce eggplants, then place them and peppers on a baking sheet to roast for about 30 minutes, until skins blister and blacken.

Transfer roasted vegetables to a heatproof bowl, cover, and let steam for 10 minutes.

Peel and discard the skins, stems, and seeds from the vegetables.

Mash or chop the vegetables in a large bowl, then season with salt, pepper, garlic, and lemon juice; slowly drizzle in oil while continuously stirring.

Serve ajvar in a glass dish, garnished with chopped parsley if desired.
