Serbian Custard Slice Recipe - Krem Pita
Serbian custard slices, also known as krem pita, are a dessert similar to French napoleons, featuring puff pastry with a rich custard filling.

Instructions

Preheat oven to 400 F.

Slightly roll out puff pastry sheets to blend seams, then lightly score each into 9 sections without cutting through.

Sandwich each pastry sheet between two pieces of parchment paper and two cooling racks.

Bake for 15 minutes, then remove the top rack and parchment. Continue baking for about 15 more minutes until golden and crispy; cool completely.

Whip egg yolks and sugar until thick and lemon-colored, then mix in instant flour and milk.

Cook the mixture in a double boiler, stirring constantly until the custard slightly thickens.

Remove from heat, then stir in gelatin dissolved in 1/2 cup cold water until fully incorporated.

Cool the custard in an ice bath, stirring occasionally; strain through a sieve if lumps are present.

Once the custard is cool and very thick but not set, fold in sweetened whipped cream.

Spread the custard over one baked puff pastry sheet, then top with the second.

Refrigerate for at least one hour.

Slice into rectangles with a damp serrated knife and dust with confectioners' sugar.
