Serbian Barbecued Shish Kebabs - Raznjici

Serbian raznjici are grilled skewers made with seasoned pork or veal cubes.

Instructions

  1. Prepare a gas or charcoal grill to medium-high (350F to 375F) or a broiler to high.

  2. Pat meat cubes dry, then season generously with salt and pepper.

  3. Combine seasoned meat, oil, garlic, and sliced onions in a nonreactive bowl; toss to coat and marinate in the refrigerator for at least 3 hours, stirring occasionally.

  4. Soak bamboo skewers in water for at least 30 minutes.

  5. Remove meat from the bowl, discarding the marinade. Thread about 6 to 8 meat cubes per skewer, alternating two cubes with one bay leaf half.

  6. Cook the skewers for 8 to 10 minutes per side until the internal temperature reaches 145F.

  7. Serve raznjici with chopped onion, either on or off the skewers.
