Instructions

  1. Melt butter and oil in a saucepan; add orzo and stir over medium heat until golden brown.

  2. Stir in uncooked rice until coated, then add chicken broth, salt, and pepper; bring to a boil (adjust salt if using bouillon).

  3. Cover, reduce heat to low, and simmer for 20 minutes until liquid is absorbed.

  4. Remove from heat, keeping covered, and let rest for 5 minutes.

  5. Before serving, stir the rice to separate grains.

  6. Optionally, mold the pilaf in a small bowl, pack tightly, then invert onto a serving plate.
