Instructions

  1. In a nonreactive bowl, whisk together the lime juice, honey, white wine or rice vinegar, and salt until the honey is completely incorporated; set aside.

  2. Heat oil in a large skillet over medium-high heat. Add scallops in batches, ensuring not to crowd the pan, and cook for 2 to 4 minutes per side until golden brown and opaque throughout. Transfer cooked scallops to a plate and repeat with the remaining scallops.

  3. Arrange greens and vegetables on individual plates, then place scallops on top. Re-whisk the dressing and sparingly drizzle it over the dish.
