Seafood Crepes With Shrimp & Lobster

Instructions

Preheat the oven to 350°F.

Blend eggs, milk, flour, 2 tablespoons melted butter, and salt until smooth.

Pour batter into a bowl, cover, and let stand for 1 hour or refrigerate for up to 12 hours.

Heat a lightly buttered crêpe pan.

Pour 1/4 cup batter into the hot pan, swirling to coat the bottom.

Cook until edges brown, then flip and cook briefly until lightly browned.

Transfer to a plate and repeat with the remaining batter, layering finished crêpes with waxed paper.

Melt 3 tablespoons butter in a saucepan over medium-low heat.

Stir in flour, salt, cayenne, and nutmeg; cook for 2 minutes while stirring.

Gradually add half-and-half, stirring until thickened.

Incorporate sherry (if using), shrimp, lobster, and chopped eggs.

Fill each crêpe with 2-3 tablespoons of seafood mixture, roll up, and arrange in a lightly buttered shallow baking dish.

Spoon any extra seafood mixture over the rolled crêpes.

Drizzle remaining 2 tablespoons melted butter over crêpes, then sprinkle with Parmesan cheese.

Bake for 15 minutes, or until heated through and bubbly.
