Instructions

  1. Preheat the oven to 350°F.

  2. Blend eggs, milk, flour, 2 tablespoons melted butter, and salt until smooth.

  3. Pour batter into a bowl, cover, and let stand for 1 hour or refrigerate for up to 12 hours.

  4. Heat a lightly buttered crêpe pan.

  5. Pour 1/4 cup batter into the hot pan, swirling to coat the bottom.

  6. Cook until edges brown, then flip and cook briefly until lightly browned.

  7. Transfer to a plate and repeat with the remaining batter, layering finished crêpes with waxed paper.

  8. Melt 3 tablespoons butter in a saucepan over medium-low heat.

  9. Stir in flour, salt, cayenne, and nutmeg; cook for 2 minutes while stirring.

  10. Gradually add half-and-half, stirring until thickened.

  11. Incorporate sherry (if using), shrimp, lobster, and chopped eggs.

  12. Fill each crêpe with 2-3 tablespoons of seafood mixture, roll up, and arrange in a lightly buttered shallow baking dish.

  13. Spoon any extra seafood mixture over the rolled crêpes.

  14. Drizzle remaining 2 tablespoons melted butter over crêpes, then sprinkle with Parmesan cheese.

  15. Bake for 15 minutes, or until heated through and bubbly.
