Seafoam Candy

Instructions

Line a 9x13-inch baking pan with greased nonstick foil.

In an extra-large heavy saucepan, combine brown sugar, dark corn syrup, vinegar, and stir constantly over medium heat until sugar dissolves and the mixture boils.

Once boiling, cook without stirring until a candy thermometer reads 300°F (hard-crack stage).

Remove from heat, rapidly stir in baking soda until fully combined and the mixture foams.

Immediately pour the mixture into the prepared pan, allowing it to spread naturally without scraping. Let the candy cool completely, undisturbed.

Once cool and set, lift the foil, peel it back, and break the candy into pieces.

Store in an airtight container at room temperature to prevent softening.
