Sea Salted Chocolate Peanut Brittle
A nutty and crunchy brittle features a unique twist with a chocolate coating and a sprinkle of flaked sea salt.

Instructions

Line a baking sheet with foil and spray with nonstick cooking spray.

Combine sugar, water, and light corn syrup in a 4-quart saucepan over medium heat.

Stir until sugar dissolves, then increase heat to medium-high and insert a candy thermometer.

Cook to 260 F (126 C).

Add peanuts, butter, and 3/4 teaspoon salt; stir well. Reduce heat to medium.

Continue cooking, stirring frequently, until it reaches 295 F (146 C).

Immediately remove from heat, stir in vanilla and baking soda until foamy.

Scrape candy onto the prepared sheet and spread into a thin layer.

Let the brittle cool until pliable, then stretch it thin.

Allow to cool completely at room temperature for about 40 minutes.

Once cool, melt chocolate and spread it over the brittle in a thin layer.

Sprinkle with flaked sea salt while chocolate is wet, then let set completely.

Break into small pieces for serving.
