Instructions

  1. Coarsely chop baby spinach.

  2. Heat olive oil in a large skillet; cook onion and garlic for 5 minutes until crisp-tender.

  3. Stir in chopped spinach; cook for 5-7 minutes until tender and its moisture evaporates.

  4. In a bowl, beat heavy cream, eggs, salt, pepper, and thyme until foamy.

  5. Add the egg mixture to the skillet; cook and stir with spinach for 4-5 minutes until scrambled.
