Instructions

  1. Preheat a wok or heavy-bottomed skillet over medium-high heat and wash shrimp.

  2. Lightly beat eggs in a bowl, then combine with chicken broth, salt, pepper, rice wine, oyster sauce, and green onion; stir well.

  3. Add 1 tablespoon of oil to the hot wok, then stir-fry shrimp until pink; remove and drain.

  4. Add the remaining oil to the wok, increase heat to high, and add the egg mixture when hot.

  5. Scramble for 1 minute, then add the reserved shrimp.

  6. Continue scrambling until eggs are almost set but still moist; remove from heat, let sit briefly, then taste and adjust salt as needed before serving.
