Instructions

  1. Preheat oven to very low heat and warm croissants on a baking sheet.

  2. Whisk eggs with milk, chives, and salt until frothy.

  3. Melt butter in a skillet over medium-low heat, then add egg mixture.

  4. Let eggs set slightly for 30-40 seconds, then push them to the center, tilting the pan to cook runny bits.

  5. Break up eggs gently with a spatula, continuing to push to the center for 1-2 minutes until firm but moist.

  6. Remove croissants, slice in half, and place on serving plates.

  7. Scoop a quarter of the eggs onto each bottom half, replace tops, and serve with cherry tomatoes.
