Scottish Rumbledethumps
Rumbledethumps is a traditional Scottish side dish featuring mashed potatoes, swede, and kale, baked with a cheesy topping.

Instructions

Preheat oven to 350 F (180 C).

Combine mashed potato and swede in a large bowl.

Melt 2 oz butter in a pan over medium heat, then cook sliced kale until softened.

Add cooked kale and remaining butter to the potato-swede mixture; mash thoroughly.

Season generously with salt and pepper.

Transfer mixture to an ovenproof dish, sprinkle with cheese, cover, and bake for 30 minutes, or until heated through.

Uncover and bake for another 5 minutes, until golden and crispy.

Serve hot.
