Sawmill Gravy With Sausage

Cook sausage in a heavy skillet over medium heat until no longer pink, breaking it apart. Remove sausage, reserving 3 tablespoons of drippings in the skillet; add fat if necessary to reach 3 tablespoons.

Return skillet to medium heat and sprinkle flour over drippings. Stir constantly until the roux lightly browns.

Gradually add 1 cup of milk, stirring to loosen pan bits.

Season with salt and pepper, then stir until gravy thickens, adding more milk or cream to adjust consistency.

Stir the cooked sausage into the gravy.

Serve hot over biscuits.
