Instructions

  1. Heat vegetable stock, salt, sugar, rosemary, sage, and thyme in a large pot over medium heat, simmering for 15 minutes until salt dissolves.

  2. Remove from heat, cool for at least 30 minutes, then add cold water.

  3. Place turkey in a large container, pour cold brine over it, cover, and refrigerate for 1 hour per pound.

  4. Before cooking, thoroughly rinse the turkey, then discard used brine and clean the container.

  5. Pat the turkey dry, apply rub if desired, then cook and serve.
