Preheat oven to 350 F and grease a 9x13-inch baking pan.

Combine caramelized onions with 1/2 cup sun-dried tomatoes in one bowl, and Parmesan with Cheddar in another.

Whisk flour, baking soda, baking powder, sugar, pepper, celery salt, garlic powder, Italian seasoning, and red pepper flakes in a large bowl.

Whisk eggs, tomato soup, olive oil, and sour cream in a separate medium bowl until smooth.

Pour the wet mixture and remaining 1/2 cup sun-dried tomatoes into the dry ingredients. Stir until just combined.

Transfer batter to the prepared pan, spreading evenly. Sprinkle the onion-tomato mixture over the top.

Sprinkle the cheese mixture evenly over the top.

Bake for 25-30 minutes until a toothpick inserted comes out clean and the cheese is melted. Cool 5 minutes, then slice and serve warm.
