Instructions

  1. Preheat oven to 350 F and grease a 9x13-inch baking pan.

  2. Combine caramelized onions with 1/2 cup sun-dried tomatoes in one bowl, and Parmesan with Cheddar in another.

  3. Whisk flour, baking soda, baking powder, sugar, pepper, celery salt, garlic powder, Italian seasoning, and red pepper flakes in a large bowl.

  4. Whisk eggs, tomato soup, olive oil, and sour cream in a separate medium bowl until smooth.

  5. Pour the wet mixture and remaining 1/2 cup sun-dried tomatoes into the dry ingredients. Stir until just combined.

  6. Transfer batter to the prepared pan, spreading evenly. Sprinkle the onion-tomato mixture over the top.

  7. Sprinkle the cheese mixture evenly over the top.

  8. Bake for 25-30 minutes until a toothpick inserted comes out clean and the cheese is melted. Cool 5 minutes, then slice and serve warm.
