Savory Scalloped Potatoes

Instructions

  1. Preheat oven to 350 F (180 C/Gas 4); lightly grease a 1 1/2- to 2-quart baking dish.

  2. Rinse and thinly slice potatoes (1/8 to 1/4 inch).

  3. In a medium saucepan, melt butter over medium-low heat and sauté green onions for 1 minute.

  4. Stir in flour until smooth, then gradually add milk, pepper, and salt; cook until thick. Blend in mustard and nutmeg, then pour over potatoes and mix thoroughly.

  5. Transfer potato mixture to the prepared dish, cover with foil, and bake for 45 minutes. Uncover and continue baking for 15 to 20 minutes more, until potatoes are tender.
