Instructions

  1. Preheat the oven to 325 F.

  2. Heat 1 tablespoon each of olive oil and butter in a large skillet; sauté onion, celery, and carrot until softened.

  3. Add garlic, cook for 2 minutes, then transfer vegetables to a baking pan.

  4. Season lamb shanks with salt and pepper; sear in the same skillet with 2 tablespoons more olive oil for 8 minutes, browning all sides.

  5. Place seared lamb with the vegetables in the baking pan.

  6. Deglaze the skillet with red wine and simmer for 2 minutes.

  7. Stir in tomato paste, chicken broth, beef broth, and vinegar; bring to a boil, then reduce heat and simmer for 5 minutes.

  8. Pour sauce over lamb and vegetables, adding thyme and bay leaf.

  9. Cover the pan tightly and bake for 1.5 hours.

  10. Uncover and continue baking for 2 to 2.5 hours more, turning shanks occasionally, until very tender.
