Preheat broiler to high.

Heat a large skillet over medium heat, melt butter, then sauté shallot for 1 minute before adding and stirring in garlic.

Sauté mushrooms for 5 minutes until browned and tender; stir in soy sauce and cook 1 to 2 minutes until liquid is mostly gone. Add thyme, season with salt and pepper, stir, then reduce heat to low.

Brush bread slices with olive oil, place on a tray, and broil each side for 2 to 3 minutes until crispy and browned.

Top warm bread with cheese, then mushrooms, and finally parsley; serve immediately.
