Preheat oven to 375 F. Clean and thinly slice leeks.

Melt butter in a large pan over medium heat. Add sliced leeks and salt; cook, stirring, for 10 minutes until tender.

Stir in half-and-half or cream, reduce heat to low, and cook for 5 minutes. Remove from heat, stir in pepper, and adjust seasoning.
