Savory Chicken and Sausage Stew Recipe
A savory chicken and smoked sausage stew with vegetables, enhanced by Cajun or Creole seasoning.

Instructions

Heat butter and olive oil in a large stockpot; brown celery, onion, and chicken.

Add garlic, Cajun seasoning, black pepper, thyme, and broth; bring to a boil, then reduce heat and simmer covered for 45 minutes.

Remove chicken, cool slightly, and skim fat from the broth. Add carrots, potatoes, and pearl onions to the broth; continue simmering covered.

In a small saucepan, heat butter and sauté the smoked sausage until browned.

Stir 1/4 cup flour into the sausage mixture until blended.

Add the sausage mixture to the simmering stew.

Debone and chop chicken, then return it to the stew. Bring the stew back to a simmer; continue cooking until vegetables are tender and the stew has thickened. Season with salt and pepper to taste.
