Savory Cheese Cornbread Muffins

Instructions

Preheat the oven to 400°F and grease a muffin tin.

In a medium bowl, combine flour, baking powder, salt, sugar, and cornmeal, then stir in the shredded cheese.

In a separate bowl, whisk the egg, milk, and melted butter or shortening.

Stir the egg and milk mixture into the flour mixture until just blended.

Immediately fill the prepared muffin cups two-thirds full and bake for 17 to 22 minutes, or until golden brown.

Optionally, brush additional melted butter over the hot muffins as soon as they come out of the oven.
