Instructions

  1. Brown chorizo sausage in a large sauté pan over medium-high heat until fully cooked.

  2. Remove chorizo, then sauté sweet potato fries in the same pan for 2-3 minutes until browned and heated; set aside.

  3. Cook scrambled eggs with butter in a separate pan over medium-high heat until done.

  4. Blend mayonnaise, Greek yogurt, chipotle pepper, garlic, and lemon juice until smooth to create the dipping sauce.

  5. Soften a rice paper wrapper in warm water, then place it on a flat surface.

  6. Arrange sweet potato fries, avocado, and scallions, then add a scoop of scrambled eggs, topped with chorizo and cotija cheese.

  7. Fold the wrapper over the chorizo and cheese, then roll it over the avocado and fries, folding in the sides, until fully wrapped.
