Instructions

  1. Preheat the oven to 425 F with a rack positioned in the lower third.

  2. Heat a 10-inch ovenproof skillet over medium heat, cook bacon until crisp, then remove to drain, reserving the drippings in the pan.

  3. Grate the cheese and set aside.

  4. Whisk or blend eggs, flour, milk, mustard, salt, and pepper until the batter is smooth.

  5. Heat the reserved bacon drippings and butter in the skillet over medium heat until the butter melts.

  6. Pour the batter into the hot skillet.

  7. Combine the grated cheese and cooked bacon, then sprinkle over the center of the batter, leaving a 1-inch border.

  8. Bake for 15 to 17 minutes until the pancake is browned and puffed around the edges.

  9. Garnish with herbs, slice into wedges, and serve hot.
