Sautéed Stinging Nettles

Instructions

  1. Start boiling salted water if blanching nettles.

  2. Clean nettles by either washing them in cool water while wearing gloves, or blanching them in boiling water for 4 minutes, then chilling in ice water and squeezing dry.

  3. Heat a large pan over high heat with oil or preferred cooking fat.

  4. Sauté the nettles, stirring frequently, for 2 minutes if blanched or 5-8 minutes if raw, ensuring high heat for raw nettles.

  5. Season with salt to taste and serve immediately.
