Sautéed Pea Greens

Instructions

  1. Trim tough ends from pea green vines and chop if overly long.

  2. Rinse greens in cool water to remove dirt, then shake off excess, leaving some water clinging.

  3. Mince green onion or garlic if using.

  4. Heat a large frying pan or wok over high heat with oil.

  5. Add minced green onion or garlic, if using, and stir-cook for 30 seconds until fragrant.

  6. Add pea greens and stir-cook for about 3 minutes until wilted and softened.

  7. Season with salt, then drizzle with olive oil and lemon juice to taste.
