Sautéed Hedgehog Mushrooms

Woody wild hedgehog mushrooms are easily prepared and cooked to a tender, browned finish.

Instructions

  1. Trim and clean mushrooms, removing any damaged bits; brush off dirt or rinse and pat dry. Slice larger mushrooms as desired.

  2. Heat a large frying pan on high. Add butter and oil, then the cleaned mushrooms. Cook, stirring frequently, until liquid evaporates and mushrooms are tender and browned, about 5 minutes.

  3. If desired, add garlic and cook, stirring, for 1-2 minutes until fragrant and mushrooms are further browned.

  4. If desired, add fresh thyme and stir for 15 seconds.

  5. Remove from heat and season generously with salt to taste.
