Instructions

  1. Heat 3 tablespoons olive oil in a large skillet over high heat.

  2. Add 2 large red and 2 large yellow bell peppers, cut into 1/2-inch strips, and sauté for 4 to 5 minutes until softened.

  3. Reduce heat to low, then add 2 cloves minced garlic, salt, and pepper; sauté for 2 minutes, ensuring garlic does not brown.

  4. Remove from heat, then stir in 1 tablespoon red wine vinegar, 1 tablespoon chopped basil, and 1 tablespoon chopped parsley.
