Sautéed Fava Beans

Instructions

  1. Shell fava beans from their pods.

  2. Start boiling a pot of generously salted water, then blanch shelled beans for 1 minute.

  3. Drain and rinse beans with cold water until cool.

  4. Remove the waxy skin from each bean and reserve.

  5. Melt butter in a large frying pan over medium heat, add skinned beans, and cook for about 3 minutes until tender, stirring frequently.

  6. Season with salt and pepper, then garnish with fresh herbs and serve immediately.
