Sautéed Fava Beans
Fava beans quickly sautéed in butter and fresh herbs make a flavorful and simple side dish.

Instructions

Shell fava beans from their pods.

Start boiling a pot of generously salted water, then blanch shelled beans for 1 minute.

Drain and rinse beans with cold water until cool.

Remove the waxy skin from each bean and reserve.

Melt butter in a large frying pan over medium heat, add skinned beans, and cook for about 3 minutes until tender, stirring frequently.

Season with salt and pepper, then garnish with fresh herbs and serve immediately.
