Instructions

  1. Cut each delicata squash in half lengthwise, remove seeds and pulp, and trim the stem end.

  2. Use a mandoline or knife to slice the squash halves thinly, between 1/16 and 1/8-inch thick.

  3. Heat olive oil and butter in a large nonstick pan until melted, coating the bottom.

  4. Add the squash and saut u00e9 for 10 to 14 minutes, stirring and turning frequently, until softened and translucent.

  5. Season the cooked squash with grated nutmeg, salt, and pepper.

  6. Transfer to a serving plate, sprinkle with Parmesan cheese, and serve hot.
