Sautéed Clamshell (Brown Beech) Mushrooms

Melt 1 tablespoon butter in a large skillet over medium heat, then add mushrooms and a pinch of salt.

Cook, stirring, for 10 minutes until mushroom juices evaporate and they begin to brown.

Incorporate garlic and cook for 1 additional minute.

Add chicken broth and balsamic vinegar.

Increase heat to high, bring liquid to a boil, and cook for a few minutes until nearly evaporated.

Remove from heat, stir in the remaining tablespoon of butter and thyme (if using). Adjust seasoning with salt and pepper.
