Instructions

  1. Preheat the oven to 400 F.

  2. Heat 1 tablespoon vegetable oil in a small skillet over medium heat, then cook 1 finely chopped medium onion until lightly browned, about 7 minutes.

  3. In a large bowl, combine 2 pounds sausage meat, the cooked onion, 2 eggs, salt, and pepper; mix thoroughly.

  4. On a floured surface, roll out 25 ounces puff or shortcrust pastry into two 8- by 10-inch rectangles, cut each into 2 strips (4 total), and chill for 10 minutes.

  5. Lightly spray 2 baking sheets, then place 2 cold pastry strips on each; form the meat mixture into a long sausage down the center of each strip, leaving a 1 1/2-inch border.

  6. Beat the remaining 1 egg and brush it on the pastry edges; fold the pastry over the meat to form rolls, then flip them seam-side down and brush the tops with egg.

  7. Cut the rolls into 1 1/2-inch lengths.

  8. Bake until golden brown, about 20 minutes, then cool before serving.
