Sausage and Cabbage Stew With Beans and Tomatoes

Instructions

  1. Heat olive oil in a large Dutch oven over medium heat.

  2. Sauté onion, carrots, celery, and sliced sausage for 3-4 minutes until the onion is wilted.

  3. Add garlic and cook, stirring, for 1 minute.

  4. Stir in cabbage, apple juice, broth, vinegar, brown sugar, and pepper; simmer uncovered for 5 minutes.

  5. Cover and simmer for 45 minutes.

  6. Add beans, parsley, and tomatoes; taste and adjust salt.

  7. Cover and simmer for an additional 15 minutes.

  8. Serve hot, garnished with parsley.
