Instructions

  1. Inspect beans for stones, then soak them in cold water overnight. The next day, drain the beans, place them in a pot, cover with 3 inches of fresh cold water, and simmer for 1 hour and 45 minutes or until tender.

  2. While beans simmer, sauté bacon in a saucepan until lightly browned. Stir in ham and garlic; cook for 2 more minutes. Add tomato, ketchup, mustard, paprika, chili powder, chipotle, sugar, salt, and water. Bring to a simmer, reduce heat, and cook for 30 minutes; then set aside.

  3. Once beans are tender, drain them, reserving 1 cup of cooking liquid. Return beans and the reserved liquid to the pot, stir in the prepared sauce, and simmer on low for 30 minutes.
