Sambar: Indian Vegetable Stew

A simple Indian vegetable and tamarind stew, traditionally served alongside Idlis, Vadas, or rice.

Instructions

  1. Start boiling pigeon peas and sambar masala in sufficient water until soft and thick.

  2. Soak tamarind in hot water for 10 minutes, then squeeze to extract the juice.

  3. Stir the tamarind juice and salt into the lentils.

  4. Simmer, then add potatoes and cook until half tender. Incorporate remaining vegetables and optional drumsticks, cooking until tender.

  5. Heat ghee in a small pan. Fry curry leaves, dry red chilies, and mustard seeds until spluttering ceases. Pour this tempering into the boiled lentils and mix.

  6. Garnish with chopped green coriander and serve hot.
