Instructions

  1. Line a baking sheet with a silicone mat or greased aluminum foil.

  2. Combine water, corn syrup, vinegar, sugar, and salt in a medium saucepan over medium-high heat. Stir until sugar dissolves, brush down pan sides with a wet brush, and insert a candy thermometer.

  3. Bring to a boil, then gradually add butter. Cook, stirring occasionally, until the mixture reaches 300 F (149 C).

  4. Remove from heat at 300 F. Stir in vanilla. Let cool for several minutes until slightly thickened but still pourable.

  5. After 4-5 minutes, spoon round drops of candy onto the prepared sheet to form lollipops.

  6. For each lollipop, press a stick into the back and cover it with candy.

  7. Continue forming lollipops. If the mixture stiffens, gently reheat on low until it loosens.

  8. Lollipops set quickly. Optionally, sprinkle with more salt. For storage, wrap individually in cling wrap at room temperature.
