Salt and Pepper Shrimp (Deep-Fried)

Instructions

Start heating oil to 360 F in a deep fryer, saucepan, or wok.

Soak the shrimp in 2 cups warm water with 1/4 teaspoon salt for 5 minutes, then rinse, drain, and pat dry.

Lightly coat the dried shrimp with tapioca starch or cornstarch.

Combine the remaining 1 teaspoon salt with freshly ground peppercorns; set aside.

Deep-fry shrimp in batches (4-5 at a time) for approximately 40 seconds until bright orange, ensuring oil stays above 350 F.

Remove fried shrimp with a slotted spoon and drain on paper towels.

Heat a second large skillet or wok, then add all shrimp and the salt and pepper mixture; stir-fry for about 30 seconds to warm and coat.
