Instructions

  1. Start boiling water in a large, covered pot.

  2. Wash and core tomatoes, cutting an 'X' into each tip before blanching them in boiling water for 1 minute; remove with a slotted spoon.

  3. Peel, seed, and slice the blanched tomatoes, then place them in a large bowl.

  4. In a separate large pot, heat oil with garlic, then stir in sliced tomatoes before garlic browns.

  5. Season with salt and pepper, cover, and simmer over low heat for 10 minutes.

  6. Stir in basil, simmer for 5 more minutes, then remove from heat.

  7. Whisk in extra-virgin olive oil until emulsified into the sauce.
