Salsa a la Huancaína Recipe (Peruvian Spicy Cheese Sauce)

Instructions

  1. Seed and chop yellow chile peppers into 1-inch pieces.

  2. In a skillet, heat oil, then sauté chopped onion, garlic, and chiles for 3 to 5 minutes until onion softens; let cool.

  3. Combine the cooled onion-chile mixture and evaporated milk in a blender, then process.

  4. Add cheese and crackers to the blender and process until smooth; adjust thickness with extra crackers or milk as needed.

  5. Season the sauce with salt and pepper to taste.

  6. Serve at room temperature or chilled.
