Seed and chop yellow chile peppers into 1-inch pieces.

In a skillet, heat oil, then sauté chopped onion, garlic, and chiles for 3 to 5 minutes until onion softens; let cool.

Combine the cooled onion-chile mixture and evaporated milk in a blender, then process.

Add cheese and crackers to the blender and process until smooth; adjust thickness with extra crackers or milk as needed.
