Salmon With Lemon Couscous

A healthy and simple meal features broiled salmon served atop lemony couscous with green onion and tomatoes.

Instructions

  1. Preheat the oven to broil.

  2. Grate 1 teaspoon lemon zest and squeeze the juice into a bowl; set aside.

  3. Heat 1 tablespoon olive oil in a skillet over medium heat, then sauté onion until tender for 4 to 5 minutes.

  4. Add green onion, lemon juice, and chicken broth to the skillet and bring to a boil. Stir in couscous and lemon zest, cover, remove from heat, and let stand for 5 minutes.

  5. Brush salmon fillets with the remaining olive oil, place skin side down on a broiler pan, and season with salt, pepper, and dill. Broil for 8 to 10 minutes per inch of thickness, until the flesh flakes easily.

  6. Fluff the couscous with a fork and stir in grape tomatoes.

  7. Serve the salmon over the prepared couscous.
