Salmon With Cranberry Sauce

Instructions

  1. Preheat the broiler.

  2. Place salmon fillets on a nonstick-sprayed broiler rack.

  3. Combine lemon juice, melted butter, salt, and pepper; brush this mixture over the salmon.

  4. In a large saucepan, melt butter over medium heat, then cook onion for 6-7 minutes until tender.

  5. Add cranberries, brown sugar, granulated sugar, currant jelly, orange juice, and lemon juice to the saucepan.

  6. Bring the sauce to a boil, then reduce heat to low and simmer for 15-20 minutes until cranberries pop and the sauce thickens; remove from heat.

  7. Broil the salmon 4-5 inches from the heat for 8-10 minutes, or until it flakes easily with a fork.

  8. Serve the broiled salmon topped with the cranberry sauce.
