Instructions

  1. Preheat the oven to 450°F.

  2. Combine orange juice, balsamic vinegar, olive oil, garlic, parsley, basil, mint, mustard, shallot, salt, and pepper in a lidded jar; shake to blend thoroughly.

  3. Arrange salmon in a foil-lined pan and spoon a small amount of the vinaigrette over the fish.

  4. Bake for 8 to 12 minutes per inch of thickness, or until fully cooked.

  5. Serve the cooked fish with the remaining vinaigrette.
